Stove Top Rice Pudding

Ingredients 140 gm of Arborio or short grain rice (approx. ½ cup) 1 litre of milk ( Soy or Rice milk) 3 tbsp of castor or less quantity of brown sugar 1 tsp. of vanilla ½ tsp. of ground cinnamon Method Place milk and rice in saucepan and bring to boil. Reduce heat and cook gently, stirring occasionally 20-30 minutes. Stir in the sugar and vanilla and heat 3 minutes. Serve hot sprinkle with cinnamon.
