Slow Cooker Chicken & Winter Vegetable Soup
1 turnip medium
1 parsnip medium
1 onion chopped medium
3 carrots large
5 celery stalks
2 spinach leaves finely chopped large
1 red capsicum diced small
500 g chicken breast fillet cut into pieces
1 sprig fresh thyme
2 chicken stock cubes crushed
6 cups water
2 bay leaves
1/4 bunch parsley finely chopped stems trimmed
3/4 tsp nutmeg
45 g French onion soup mix
1 1/2 tbs crushed garlic
1 tbs olive oil
Place water in slow cooker and turn to high. Add stock cubes, soup mix and salt and pepper to slow cooker and stir.
Chop turnip, parsnip, carrots and celery into small, even pieces, then add to slow cooker and stir.
Heat a tablespoon of oil in a fry pan on medium heat and cook the onion and garlic together for 2-3 minutes until they are just starting to turn opaque. Do not brown.
Add onion and garlic to slow cooker and stir.
