Peri Peri Chicken & Rice Lettuce Cups


Ingredients

25g sachet medium peri peri spice mix

2 cups shredded cooked chicken

250g packet 90-second long-grain white rice

1 Lebanese cucumber, halved lengthways, seeded, thinly

sliced

1 green capsicum, diced

2 green onions, thinly sliced

2 tablespoons lemon juice

1 tablespoon extra virgin olive oil

1 little gem lettuce, leaves separated

Method

Combine spice mix and chicken in a microwave-safe bowl. Microwave on HIGH (100%) for 1 minute.

Cook rice following packet directions. Add rice to chicken mixture with cucumber, capsicum, onion, lemon juice and oil. Toss to combine.

Divide chicken among lettuce leaves. Serve.
