Stove Top Rice Pudding


Ingredients

140 gm of Arborio or short grain rice (approx. ½ cup)

1 litre of milk ( Soy or Rice milk)

3 tbsp of castor or less quantity of brown sugar

1 tsp. of vanilla

½ tsp. of ground cinnamon

Method

Place milk and rice in saucepan and bring to boil.

Reduce heat and cook gently, stirring occasionally 20-30 minutes.

Stir in the sugar and vanilla and heat 3 minutes.

Serve hot sprinkle with cinnamon.

Variations: serve with almond flakes and other nuts, dry fruit (sultanas, prunes, dates) stewed fruit (apples, pears, peaches) fresh seasonal fruit or LSA (ground organic Linseed, Sunflower and Almond Mix)

Serves 4 to 6.
